The preparation
Concept and palette were locked two weeks out: chef’s table in open water, built around tide white, shallow blue, driftwood. Florals — white orchids anchored in glass hurricanes — were prepared in our studio the day before.
The challenge
A dining table in the actual bay: legs levelled underwater, courses timed to the tide table, everything out before dark.
The result
Ten guests dined ankle-deep at sunset; the chef called it the best-behaved dining room he’d ever worked.
